This one is bold, hearty, and completely alpha-gal safe — and it is going to become one of your most requested weeknight dinners. Cowboy Chicken is well-seasoned chicken breasts seared in a skillet and smothered in a smoky, savory mixture of black beans, fire-roasted tomatoes, corn, and green chiles, topped with melty dairy-free cheese. One skillet, 35 minutes, and a dinner that tastes like it has been simmering all day. Serve it over rice or with tortilla chips and you have got something truly special on the table.
A Quick Note Before You Shop
When possible, we recommend purchasing organic ingredients. It’s not always feasible or affordable, and that’s okay — do what you can. But for those who are more sensitive or working to reduce overall toxic load, organic is worth the effort, especially for chicken and fresh produce.
What Makes This Cowboy Chicken Alpha-Gal Safe?
Label-reading never takes a day off — not even for a one-skillet dinner.
Chicken breasts — Chicken is alpha-gal safe, but always check the packaging. Look for plain boneless skinless chicken breasts with one ingredient: chicken.
Dairy-free shredded cheese — The key swap here. Several great dairy-free shredded cheese options are available now. Always read the label carefully to confirm no dairy or mammalian-derived ingredients are present.
Black beans — Most plain canned black beans are alpha-gal safe. Always check the label for any added lard or mammalian-derived ingredients. Look for a simple, clean ingredient list.
Fire-roasted tomatoes — Most plain canned fire-roasted tomatoes are alpha-gal safe. Always read the label and look for a simple, clean ingredient list.
Green chiles — Most canned mild green chiles are alpha-gal safe. Always read the label and look for a simple, clean ingredient list.
Spices — Most plain spices are alpha-gal safe, but always check for any added anti-caking agents or fillers.
As always: your alpha-gal is not my alpha-gal. Individual reactions vary, and what works beautifully for one person may not for another. Read every label, trust your gut (literally), and adjust accordingly.
For the Low-Histamine Community
If histamine is also on your radar, a few small swaps can help:
- Use fresh chicken and cook immediately after purchasing
- Fire-roasted tomatoes can be a trigger for some — substitute with fresh crushed tomatoes
- Canned black beans can be a trigger for some — substitute with freshly cooked black beans
- Green chiles can be a trigger for some — reduce the amount or omit altogether
- Dairy-free cheese can vary in ingredients — check labels carefully for fermented or aged ingredients
As always, individual tolerance varies. Start with what you know works for your body.

Tips for Success
Sear the chicken first. Don’t skip the sear — it locks in the juices and gives the chicken that beautiful golden crust that makes this dish so good.
Use an oven-safe skillet. If you want an even meltier cheese topping, transfer the skillet to a 375 degree F oven for the last 5 minutes of cooking instead of using the stovetop lid method.
Check your black beans. Some canned black beans contain lard or other mammalian-derived ingredients. Always read the label carefully before buying.
Make it spicier. Love heat? Add an extra 1/2 teaspoon of chili powder or a pinch of cayenne to the spice mixture.
