  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush corn lightly with olive oil and grill for 8 to 10 minutes, turning occasionally, until kernels are charred in spots.
