  • 4 medium beefsteak or plum tomatoes

Instructions

  1. Preheat oven to 400 degrees F. Lightly grease a baking dish with olive oil.
  2. Cut the tops off each tomato. Using a spoon, carefully scoop out the seeds and pulp, leaving the walls intact. Sprinkle the inside of each tomato with a pinch of salt and turn upside down on a paper towel for 5 minutes to drain excess moisture.
  3. In a medium bowl, combine breadcrumbs, dairy-free Parmesan, dairy-free shredded cheese, melted plant-based butter, garlic, parsley, salt, and pepper. Stir until evenly combined.
  4. Spoon the breadcrumb mixture generously into each tomato. Place stuffed tomatoes in the prepared baking dish.
  5. Drizzle the tops lightly with olive oil.
  6. Bake uncovered for 18 to 20 minutes, until the tops are golden brown and the tomatoes are tender.
  7. Let cool slightly before serving. Garnish with additional fresh parsley.

Tips for Success

Drain the tomatoes before stuffing. Salting the inside and turning them upside down for a few minutes draws out excess moisture and keeps the stuffing from getting soggy.

Don’t overstuff. A generous mound of filling on top is perfect — it gives you that beautiful golden crust without spilling all over the pan.

Choose firm tomatoes. The firmer the tomato, the better it holds its shape during baking. Overripe tomatoes will collapse and get mushy. Look for tomatoes that feel firm when gently squeezed.
