Taco night just got a serious upgrade. These grilled shrimp tacos are loaded with smoky, perfectly seasoned shrimp, a bright and crunchy mango slaw, and a dairy-free lime crema that ties everything together. They are fresh, festive, and completely alpha-gal safe. This is the kind of meal that makes you forget you have a dietary restriction at all.
A Quick Note Before You Shop
When possible, we recommend purchasing organic ingredients. It’s not always feasible or affordable, and that’s okay — do what you can. But for those who are more sensitive or working to reduce overall toxic load, organic is worth the effort, especially for fresh produce like cabbage and mango.
What Makes These Tacos Alpha-Gal Safe?
Label-reading never takes a day off — not even on taco night.
Shrimp — Shrimp is alpha-gal safe, but always check for additives. Some frozen shrimp are treated with sodium tripolyphosphate or other preservatives. Look for shrimp with a simple, clean ingredient list or buy fresh when possible.
Corn tortillas — Most plain corn tortillas are alpha-gal safe. Flour tortillas can contain lard or dairy, so stick with corn and read the label.
Coconut cream — Used here for the lime crema. Look for full-fat coconut cream with a short ingredient list. Some brands add guar gum or other stabilizers which are generally fine, but always check.
Mayonnaise — Most standard mayonnaise is dairy-free, but always confirm. Look for a clean ingredient list with no added dairy.
As always: your alpha-gal is not my alpha-gal. Individual reactions vary, and what works beautifully for one person may not for another. Read every label, trust your gut (literally), and adjust accordingly.
For the Low-Histamine Community
If histamine is also on your radar, a few small swaps can help:
- Use fresh shrimp instead of frozen when possible, and cook immediately after purchasing
- Skip the mango if tropical fruits are a trigger for you and substitute with shredded apple or jicama
- Choose fresh lime juice over bottled
- Coconut cream is generally well tolerated but individual reactions vary
As always, individual tolerance varies. Start with what you know works for your body.

Tips for Success
Don’t overcook the shrimp. Shrimp cook fast — 2 to 3 minutes per side is all you need. Overcooked shrimp gets rubbery fast.
Make the slaw and crema ahead. Both can be made a few hours in advance and refrigerated. It actually gives the flavors time to develop.
Double the crema. You will want more. Trust me.
