Some recipes are just begging to be made alpha-gal friendly, and these zucchini patties are one of them.

They’re crispy on the outside, tender in the middle, loaded with zucchini, and easy enough to throw together for lunch, dinner, or even a quick snack. The original recipe relies on Parmesan and mozzarella for flavor and texture, but with a couple of simple dairy-free swaps, we can keep everything mammal-free without sacrificing the good stuff.

And if your garden is currently producing zucchini faster than you know what to do with it, well… problem solved

A Quick Note Before You Shop

As always, labels matter.

Zucchini, onion, eggs, and plain flour are pretty straightforward, but the packaged ingredients are where we need to pay closer attention.

For the dairy-free cheese, look for plant-based options that work for your individual level of sensitivity. Ingredients and manufacturing practices can change, so even if you’ve purchased a product before, it’s always worth giving that label another look.

When possible, I also recommend choosing simple ingredients with as few additives as possible.

What Makes These Zucchini Patties Alpha-Gal Friendly?

The original zucchini patties contain both Parmesan and mozzarella cheese. Those are the two main ingredients we’re replacing to make this recipe dairy-free and mammal-free.

Eggs — Eggs do not come from mammals and are generally considered alpha-gal friendly.

Dairy-free Parmesan — Choose a plant-based Parmesan alternative with ingredients you tolerate.

Dairy-free mozzarella — Look for a plant-based shredded mozzarella without mammal-derived ingredients.

Avocado or vegetable oil — Either works well for frying these patties. Choose a 100% plant-based oil without added flavorings.

Flour and seasonings — Plain flour and individual spices are typically straightforward, but packaged seasoning blends can sometimes contain fillers or additives, so keep reading those labels.

Individual reactions vary, and what works beautifully for one person may not work for another. Read every label, know your tolerance level, and adjust accordingly.

If histamine is also something you’re navigating, there are a few things to keep in mind.

  • Use fresh zucchini and eggs whenever possible.
  • Cook the patties shortly after preparing the mixture rather than letting it sit in the refrigerator.
  • Dairy-free cheeses can contain ingredients that may not work for everyone following a low-histamine diet, so choose one you already know you tolerate.
  • If garlic or black pepper tends to bother you, simply leave them out.

Ingredients

  • 2 cups grated zucchini
  • 2 large eggs, beaten
  • ½ cup all-purpose flour
  • ½ cup dairy-free grated Parmesan
  • ½ cup dairy-free shredded mozzarella
  • ¼ cup finely chopped onion
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder, optional
  • 2 tablespoons avocado oil or vegetable oil, plus more as needed

Instructions

  1. Grate the zucchini and place it in a clean kitchen towel. Twist the towel tightly and squeeze out as much excess moisture as possible.
  2. Add the drained zucchini to a large mixing bowl.
  3. Add the eggs, flour, dairy-free Parmesan, dairy-free mozzarella, onion, salt, black pepper, and garlic powder. Stir until everything is well combined.
  4. Heat the avocado oil in a large skillet over medium heat.
  5. Scoop approximately ¼ cup of the zucchini mixture into the skillet for each patty. Gently flatten each one with the back of a spoon or spatula.
  6. Cook for 2–3 minutes per side, or until golden brown and crispy on the outside and cooked through in the center.
  7. Transfer the cooked patties to a paper-towel-lined plate or cooling rack.
  8. Repeat with the remaining zucchini mixture, adding more oil to the skillet as needed.
  9. Serve warm with your favorite alpha-gal-friendly dipping sauce.

Tips for Success

Squeeze that zucchini. This is probably the most important step in the entire recipe. Zucchini holds a lot of water, and too much moisture will leave you with soft patties instead of crispy ones.

Don’t make them too thick. Flatten the patties slightly once they hit the skillet. This helps the center cook through before the outside gets too dark.

Give them room. Don’t crowd the skillet. A little space around each patty helps those edges get golden and crispy.

Let the oil get hot first. If the oil isn’t hot enough, the patties will soak it up instead of frying properly.

Want a little more crunch? Replace part of the flour with plain, alpha-gal-friendly panko breadcrumbs. Just be sure to check the label first.

What to Serve With Zucchini Patties

These work as a side dish, appetizer, or even a light lunch.

Try serving them with grilled chicken, a fresh salad, roasted vegetables, or an alpha-gal-friendly dipping sauce.

A dairy-free garlic ranch would be ridiculously good here

  5. While chicken is baking, add chopped broccoli, red onion, sunflower seeds, and cilantro to a large bowl.
  6. In a small bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, lime juice, and lime zest. Pour over broccoli salad and toss until well coated.
  7. Serve broccoli salad alongside the cooked chicken thighs.
